my new favorite thing to make is frittata. what is funny about this is that i have always been very intimidated by it. until one day i saw ina garten (the barefoot contessa) make one and i thought...HOLY HELL that is so easy. i made one that same day.

frittata basics:
a dozen eggs
any meat you like
any veggie you like
1 cup cream (i used fresh goat milk)
herbs of your choice
salt & pepper

-beat the eggs and cream together, set aside
-saute any veggies that need it, like onions and garlic
-cook any uncooked meat by just adding it to the veggies
-pour in the egg mixture
-season
-pop in the oven at 450 and let it bake anywhere from 10-50 minutes. i know this sounds crazy, but the more ingredients you put in and the hotter your pan is from cooking the ingredients, the less time it will need in the oven.
